Guilin Cuisine has been greatly influenced by Hunan Cuisine emphasized hot flavors and Canton Cuisine emphasized light flavor. Because Guilin is home to many ethnic groups, it also has a variety of ethnic snacks and dishes. As to Guilin home cooking, it often uses chili and pepper as seasoning to enrich the flavors. The famous dishes are Small Carp in Brown Sauce, Steamed Sliced Pork the Local Taro, Li River Fish cooked in Beer, Ginkgo and Old Soup, etc.
 Guilin Rice Noodle - A famous local delicacy, is also can be cooked by stir-fired. This local food is very common in Guilin city, which served as most locals' breakfast. Rice noodle has a history more than 2,000 years in Guilin. As the legend goes, it was originally made to serve Qingshihuang Emperor's troop who came from the northern part of China. The soldiers are disagreeable with the damp and torrid weather in South. Because in the place there is the rice in abundance, locals made noodle out of rice. Together with the seasoning soup made from many traditional herbs, the food cured many soldiers of illness. Later, the food has been handeded down untill today. Today, Rice Noodle is either round or flat in shape, and eaten with the meat top as well as pickles. Local people usually have the Rice Noodle first without soup. |
