Roasted Peking duckThe modern Sichuan Cuisine is basically characterized by six flavors, namely, numbing, spicy, sweet, salty, sour, and bitter. On the basis of the six basic flavors, mixed flavors are created. Diverse and numerous dishes are made by using different raw materials and cooking methods. There are more than 27 mixed flavors of modern Sichuan Cuisine.

The cuisine features a wide range of materials, various seasonings and different cooking techniques. Statistics show that the number of Sichuan dishes has surpassed 5,000. With a rich variety of strong flavors, Sichuan food is famous for its countless delicacies, dominated by peppery, chili flavours, and best known for being spicy-hot. If you find the Sichuan dishes too bland, then you are probably not eating authentic Sichuan cuisine. Chili peppers and prickly ash are used in many dishes, giving it a distinctively spicy taste, called Ma in Chinese. It often leaves a slight numb sensation in the mouth. However, most peppers were brought to China from the Americas in the 18th century so thanks to the global trade for much of Sichuan cuisine's excellence.
