About the Specialty
In China, there's another way to classify cuisines besides region, it is based on the origin of the dishes. This system includes dishes of the palace, official, common people, mountain and forest temples, and ethnic minorities, as well as dishes of foreign countries. This way of classification has a very long history. It was based on the rigid stratification of China's feudal society, which lasted for thousands of years and forced different ways of living upon the people. The differences in the stratification of the foods were recorded in the Unofficial Annals of the States in the Spring and Autumn Period as follows, ¡®The emperor ate beef and sheep; officials ate pig; scholars ate fish; and the common people ate vegetables.' Feudal ethics and different living standards among the differing strata resulted in Chinese food being classified into the palace, official, and common people cuisines. Royal cuisine included the famous dishes of the wealthy people. The standards for the officials are it should be lower than for palace food while remain far superior to the common people. Royal dishes were created by working people, but were eaten only by feudal bureaucrats, aristocrats, and the rich.

[ Itinerary Description ]
Hutong reflects the life of ordinary Beijing residents and the history of the city as a whole. A Hutong is an old city lane unique in Beijing, where Hutongs run into the several thousand surrounding the Forbidden City, many were built during the Yuan, Ming and Qing Dynasties.
One kind of Hutong, usually referred to as the regular Hutong, was near the palace to the east and west and arranged in orderly fashion along the streets. Most of the resident of these Hutongs were imperial kinsmen and aristocrats. Another kind, the simple and crude Hutong, was mostly located far to the north and south of the palace. The residents were merchants and other ordinary people. The main buildings in the Hutong were almost all quadrangles, Siheyuan. The big Siheyuan of the high-ranking officials and wealthy merchants were specially built with roof beams and pillars all beautifully carved and painted, each with a front yard and back yard. Hutongs, in fact, are passages formed by many closely arranged Siheyuans of different sizes. The specially built Siheyuan all face the south for better lighting, as a result, a lot of Hutongs run from east to west. Between the big Hutongs many small ones went north and south for convenient passage.
About two and a half hour later, your plane will be landed at Chengdu, the capital city of Sichuan Province. The city was founded in 3rd century BC, when the Qin conquered all of China within two centuries. Day 08 Guangzhou--Hangzhou (B/L)
If you desire, get up earlier than usual and give a try of the Morning Tea. Then go to visit Xiguan Residence. Be transferred to the airport for the flight to Hangzhou.
[ Itinerary Description ]
About the Specialty
In a wider definition, to go to drink morning tea does not just mean to drink one cup of tea after another without eating. Instead you will find many dim sums (snacks), which are quite tasty with the companion of tea. The most favorite dim sum is the flour ribbon, which is made plaint then folded with shrimps or beefs after the flour water was boiled into solid. The texture of the flour should be smooth and easy to chew in the mouth. The solid substance of flour with soybean sauce makes people satiated easily, so it is always the first choice for everyone. Another dim sum which taste is delicate is the shrimp dumpling. A shrimp dumpling in high quality should have a translucent rice-powder-made outer cloth, which is dubbed as 'the crystal layer'. Inside there are about two shrimps, with some vegetables as garments. The appearance is quite attractive because the cooked shrimps' redness and the vegetables' greenness through the translucent layer look very colorful. For Canton residents, it is an access to socialize rather than having a breakfast. They do not only mean to eat but want to spread news, exchange friendship and negotiate business. When negotiation is deadlocked, Cantonese people will find a decent teahouse to settle down their issues in a more relaxing atmosphere.
After the food, come to experience the other aspect of Canton culture-Xiguan Residence. It was built by the riches and the powerfuls for residing at the west area of Guangdong(Xiguan Corner) at the end of Qing Dynasty. Its building style boasts of Lingnan(southern China)local features, hence the name. Most of the houses of Xiguan Residence are built with bricks and timbers, and its lofty frontispiece is embedded with marbles. Its plane layout follows the Chinese traditional design of main hall and expands to the direction of depth. Xiguan Reside is regarded as treasure of Guangzhou traditional architecture, and there are 100 houses existing until now. Xiguan is also the old city area of Guangzhou.
After about two hours's flight, the plane will be landed at Hangzhou, the capital of Zhejiang Province, is located by the Qiantang River at the Southern end of the Grand Canal. As Macro Polo once said, it is the most beautiful and elegant city in the world.
Day 09 Hangzhou (B/L/D)
Today starts off with the transfer to Hangzhou. After arrival, take a trip in the city including West Lake, Lingyin Temple, Six Harmonies Pagoda and Huqingyu's Traditional Pharmacy. Huaiyang Cuisine will be served as dinner.
[ Itinerary Description ]
You will believe that what made Hangzhou so famous is the West Lake since you can not say a proper word to describe the beauty of West Lake at the first sight. The picturesque lake deserves its fame with ten scenic views adding natural beauty to the unique cultural value of the environment. This lake was originally a shallow bay where the Qiantang River met the sea. It is surrounded on three sides by mountains and on the fourth by the city. In whose western region it now sits, hence the name 'West Lake'. If you desire, you would board a boat to some islands in the lake. One called Small Yingzhou Islet built in 1607, will impresses you. The concept of this island is: 'an island within the lake and a lake within an island'. The layout of the whole island is quite impressive and reflected a huge amount of planning and forethought by those who constructed it. Just off the southern shore of this island are three gourd-shaped pagodas. Each is about two meters high, erected since 1621. Each pagoda has five round holes in it and when lit candles are placed into each pagoda, the light from these candles together with the moonlight reflecting off the water give rise to the naming of this feature as 'Three Pools Mirroring the Moon'.
Next move to Lingyin Temple, truly a spot to behold. It is said that in 326 A.D. a monk named Hui Li came to Hangzhou for the sake of finding an ideal valley for a soul retreat. He built a temple there, naming it the 'Monastery of the Soul's Retreat'. The Chinese word for soul is 'ling' and retreat is 'yin', therefore the monastery came to be known as Ling Yin Temple. In one of the temples you see China's largest sitting statue of Buddha. Carved out of 24 pieces of camphor wood and gilded with 104 ounces of gold, it measures an impressive 19.6 meters high.
After lunch the Six Harmonies Pagoda is waiting for you. It is one of the most prominent wood-and-brick structures of ancient China. The name of the pagoda relates to the six codes of Buddhism. Moreover, Huqingyu's Traditional Pharmacy will display the essence of Chinese traditional Medicine.
